- Încălzim 100 ml de lapte (din cei 250 ml), adăugăm o lingură cu vârf de făină și amestecam rapid. Lăsăm amestecul să se răcescă, dar nu de tot. Cât este călduț, adăugăm o linguriță de zahăr și plicul de drojdie uscată. Amestecăm cât să se omogenizeze totul. Acoperim vasul și lăsăm maiaua să crescă. În aproximativ 30 de minute va fi gata.
- Hidratăm stafidele cu o lingură de rom autentic.
- Într-un bol încăpător batem ouăle cu sarea, zahărul și vanilia, până când cristalele de zahăr nu se mai simt.
- Cerneți făina și faceți un mic gol în mijloc. Adăugați ouăle bătute, maiaua și laptele rămas. Frământați un aluat destul de moale, dacă vă mai trebuie lapte, puteți adauga. La sfârșit, veniți cu untul și frământați până când se încorporează tot. Acoperiți bolul și îl lăsați la loc cald până când își dublează volumul.
- Pregătiți umplutura: fierbeți laptele cu zahărul și adăugați cacao până se transformă într-un sos gros. Luați-l de pe foc și îl lăsați să se răcească. Adăugați stafidele și făina de migdale. Albușurile bătute spumă le adăugați la sfârșit.
- Pe suprafața unsă cu puțin ulei, răsturnați aluatul și îl întindeți. Adăugați umplutura și îl rulați. Așezați cozonacul în tavă și îl mai lăsați la crescut pentru 20-30 de minute.
- Preîncălziți cuptorul la 180 grade Celsius. Îl dați la cuptor pentru 45 de minute. Cât este cald îl ungeți cu puțin lapte și zahăr.
